Chef Matt, a man of few words but great taste, used to say, “A good cut needs only two things: respect and the right rub.” His rub was a mix of brown sugar, sea salt, paprika, black pepper, mustard, and a whisper of dark roast coffee, Black Riffle Blend — just enough to wake up the meat without masking its soul.
